Glazes for Ham. 1 cup of brown sugar; 1 tbsp; dry mustard; 1/2 cup pickle juice or spiced fruit juice may be added.

1 cup brown sugar and 3/4 cup crushed pineapple. 1 cup cranberry or currant jelly.

Pancakes in orange sauce. Melt 1/3 cup butter in dish; blend in 2 tbsp. sugar; 1/3 cup orange juice, and a bit of grated orange rind.

Turn crepes in hot sauce, then fold them in halves or quarters. Place 3 or 4 on each desert plate with some of the sauce spooned over.

Rock Roast Cornish Hen - Thaw four (12-15 oz.) frozen hens, wash and pat dry. Heat oven to 425. Rub cavities with salt and pepper.

Place breast side up in roasting pan. Brush hens with unsalted fat. Roast about 1 hr. or until fork tender, brushing hens with fat 2-3 times during roasting.
